Ingredients:
• 600gm octopus
• 2 chopped garlic cloves
• 1 chopped sprig of parsley
• extra virgin olive oil
• juice from ½ a lemon
• salt to taste
Method:
1. Carefully clean the octopus by removing the eyes and the beak at the centre of the tentacles. Turn the head upside down and remove the black bag and the entrails.
2. Beat the octopus for a while on a board with a rolling pin to tenderise it.
3. Place it in a pot with a little cold salted water and cook over low heat for about half an hour.
4. After the water begins to boil, leave it in the water and let it cool, then drain it.
5. Remove the outer film, cut into regular pieces and place them in a tray.
6. Prepare the dressing with chopped parsley garlic, add lemon juice and a little oil.
7. Pour the dressing over the octopus and mix well.
8. Leave it to rest in a cool place for a few hours, taking care to stir it occasionally. Serve cold with a sprinkle of chopped parsley.
