IngredientsÂ
FOR THE CAULIFLOWER MARINADE:Â
- 1 cauliflowerÂ
- 3 tbsp olive oilÂ
- 1 tsp ground cuminÂ
- 1 tsp ground corianderÂ
- 1 tsp garlic powderÂ
- ½ tsp ground cinnamonÂ
- ½ tsp ground turmericÂ
- ½ tsp chilli powderÂ
- 2 tbsp harissa pasteÂ
- 4 tbsp pure maple syrup (preferably amber syrup for its rich taste)Â
- 1 tsp saltÂ
FOR THE DRESSING:Â
- 2 tbsp fresh lemon juiceÂ
- 4 tbsp pure maple syrup (preferably amber syrup for its rich taste)Â
- 2 tbsp olive oilÂ
- ¼ cup tahini pasteÂ
- 1 tbsp waterÂ
- Salt and pepper, to tasteÂ
TO SERVE:Â
- ½ cup feta cheese, crumbledÂ
- Handful of pomegranate seedsÂ
- Handful of roasted macadamia nuts, choppedÂ
- Handful mint leaves, tornÂ
MethodÂ
TO MAKE THE CAULIFLOWER:Â
- Heat your BBQ.Â
- Mix all the ingredients for the marinade until well blended.Â
- Put the cauliflower in a cooking dish or a large bowl, coat with the marinade and set aside for an hour.Â
- Place the cauliflower on the BBQ then cook for about 45 minutes or until a knife can slide in easily and the cauliflower is slightly caramelised.Â
TO MAKE THE DRESSING:Â
- In a small bowl, combine the lemon juice and maple syrup. Add the oil, water and tahini paste.Â
- To serve, top the cauliflower with the dressing, feta, pomegranate seeds, macadamia nuts and mint leaves.Â
