Irresistibly Fluffy Ricotta Pancakes

  • 3 eggs – separated
  • 1 1/2 cups milk
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 1 1/2 cup plain flour
  • 1/4 cup caster sugar
  • 100g fresh ricotta  
  1. Combine the yolks, milk, baking powder and vanilla in a bowl and whisk together. Add in the flour and whisk until smooth.
  2. Whisk together the egg whites and sugar until a thick meringue forms and fold into the base mixture.
  3. Spoon into a pan of your choice and crumble some ricotta into each pancake. Cook over medium-low heat before flipping. 

 Serve with grilled nectarines, honey and more ricotta x
